Sometimes, at home, small amount of various type of vegetables are left in our refrigerator and we don’t know what to do with those vegetable so this is the one way that you can use those vegetables to make a delicious recipe. I have used fresh vegetables to make the recipe.

INGREDIENTS:
for kofta:
- sliced bread- 3pcs
- cornflower- 2Tbsp
- carrot (grated)- 75g
- potato (boiled)- 90g
- onion (chopped)- 40g
- salt- ½tsp (or to taste)
- turmeric powder- ½tsp
- red chilli powder- ½tsp
- cabbage (chopped)- 100g
- gram flour (besan)- 3Tbsp
- ginger & garlic paste- 1tsp
- cumin powder (jeera)- ½tsp
- garam masala powder- ½tsp
- green beans (chopped)- 50g
- green capsicum(chopped)- 30g
- coriander leaves (chopped)- 10g
- coriander powder (dhania)- ½tsp
- cubanelle pepper (chopped)- 40g
- white oil- 2cups (only ½cup was used)
for gravy:
- raisins- 20g
- ghee- 1Tbsp
- sugar- 1Tbsp
- onion paste- 100g
- tomato paste- 100g
- coconut milk- 300ml
- salt 1tsp (or to taste)
- onion (chopped)- 20g
- turmeric powder- 1tsp
- red chilli powder- 1tsp
- ginger & garlic paste- 2tsp
- cumin powder (jeera)- 1tsp
- garam masala powder- 1tsp
- kashmiri red chilli powder- 1tsp
- coriander leaves (chopped) - 5g
- coriander powder (dhania)- 1tsp
- white oil- ½cup (from leftover oil)
- cashew nuts & melon seeds paste- 20g
DIRECTIONS:
At first, take sliced bread (3pcs), cut and remove the hard surfaces of the bread. Torn the bread pieces into small pieces and keep into a bowl. Add a mashed boiled potato (90g) followed by all the chopped vegetables as mentioned above to make kofta. You can grate carrot as it is hard and having less water content. Add gram flour (besan) 3Tbsp, salt (½tsp) or to taste, turmeric powder (½tsp), red chilli powder (½tsp), cumin powder (jeera) ½tsp, coriander powder (dhania) ½tsp, garam masala powder (½tsp). Mix all the ingredients with hand and make a semi solid dough (not very hard, neither too soft). Keep it aside.
Switch on gas stove, place a frying pan, put while oil (2cups) and heat. Make small ball shape (kofta) from the mixture and fry in the oil for 6-8min or until golden brown on medium heat. Keep it aside. Only ½cup of oil was used to fry the kofta.
Next, switch on gas flame, place a frying pan, put white oil (½cup) and heat it. Add chopped onions (20g) and fry for 2-3min. Add onion paste (100g) and fry for 4-5min. Add ginger & garlic paste (2tsp) and fry for 2-3min. Add tomato paste (100g) and fry for 3-4min. Add red chilli powder (1tsp), turmeric powder (1tsp), kashmiri red chilli powder (1tsp), cumin powder (jeera) 1tsp, coriander powder (dhania) 1tsp and fry for 5-6min. Add cashew nuts & melon seeds paste (20g) and cook for 5-6min. Add coconut milk (300ml) with 1½cup of water (adjust the amount of water based on the amount of gravy you want), salt 1tsp ( as to taste) and sugar (1Tbsp), raisins (20g) but keep few to garnish later and cook for 10-12 on low heat or until the gravy boils. Add fried kofta pieces, add garam masala powder (1tsp), ghee (1Tbsp), sprinkle chopped coriander leaves (5g), coconut milk (1tsp, optional). Switch off the gas flame and cover with a lid. Mix Veg Malai Kofta is ready to serve.

Chopped vegetables are ideal for kofta as it discharges less amount of water.
