Chanar Koftar Malaicurry or ছানার কোফতার মালাইকারি is a niramish (pure-veg) traditional Bengali recipe. Kofta is made with chana/chenna and then cooked in coconut milk-based gravy.

INGREDIENTS:
To make chanar kofta
- ½tsp salt
- 1tsp ghee
- 1tsp sugar
- 1cup white oil
- 4tbsp plain flour (maida)
- ½tsp garam masala powder
- 1tsp ginger & green chilli paste*
- 250g chana/chenna (made from 1L full cream milk)
- 2tsp sugar
- 4pcs clove
- 1tbsp ghee
- ⅓cup white oil
- 1cup coconut milk
- 1tsp cumin powder
- 1pc cinnamon stick
- 1tbsp tomato paste
- 1tsp salt (or to taste)
- 1tsp coriander powder
- 4pcs green cardamom
- ½tsp gram masala powder
- ½tsp kashmiri red chilli powder
- 10pcs cashew & 10pcs raisins paste
- 2tbsp ginger (30g) & (4pcs) chilli paste*

Q: How to make the kofta soft?
Ans: Remove as much water from the chana/chenna as possible; otherwise, you'll have to use a lot of plain flour (maida) to make the kofta, which will make it hard.
