ICE CREAM CAKE

INTRODUCTION

There is nothing like a homemade refreshing dessert on Valentine's Day or during the hot summer, and this Ice Cream Cake you can easily make at home with few common cake ingredients . To make this cake, no backing or oven is required. Oreo biscuit powder mixture followed by two different layers of flavoured ice cream and on the top spread of squashed strawberries and strawberries jam make the cake very delicious and colourful, which is ideal for Valentine's Day, marriage anniversary or other special occasions.

INGREDIENTS

  • sugar- 2tsp
  • cherries- 6pcs
  • Oreo biscuit- 16pcs
  • strawberries- 15pcs
  • strawberry jam- 2Tbsp
  • condensed milk- 6Tbsp  
  • vanilla essence- 5drops
  • pink food colour- 5drops
  • strawberry essence- 5drops
  • crushed pista (pistachio)- 1tsp
  • fresh cream or thickened cream- 400g

DIRECTIONS
For this recipe, we need Oreo biscuit powder. Split the biscuit from the paste and remove the cream from all the biscuits surface as we only need biscuits for the recipe. Grinned the biscuits in a grinder and transfer the biscuit powder into a bowl. Add melted butter and mix nicely the butter with the biscuit powder.

Take a transparent utensil (glass), which will give a nice look to the recipe. At the bottom, put the Oreo biscuit powder mixture and make a layer. Gently press and level of the mixture. Set aside in the refrigerator for 15 min.
 
For this recipe, we also need strawberries. Roughly cut the strawberries into 3-4 pieces. Take cherries and roughly cut the cherries into small pieces. Add strawberry jam, sugar, strawberry essence and pink food colour. Mix well all the ingredients and set aside in refrigerator for 15min.

Crush the pista nuts (pistachio) in a hand grinder. Take fresh cream or thickened cream into a metal bowl, add condensed milk or sugar, add vanilla essence and whip the cream until thickened. 

Take out the utensil from refrigerator, add a layer of the vanilla cream mixture (white). Sprinkle some crusted pista nuts.  Set aside in the refrigerator for 15min

Take another set of cream mixture in a metal bowl, whip the mixture until thickened. Add the strawberry mixture. Mix it nicely with the cream, add food colour, add strawberry essence. Again, mix all the ingredients.

Take out the glass utensil from refrigerator. Add a layer of strawberry-cream mixture on top of vanilla mixture layer. Need to perform this task carefully so that vanilla and strawberry layer will not mixed together. Spread rest of the cherry and strawberry mixture on the top. Seal the utensil’s top with aluminium foil and set aside in the refrigerator for 5-6hours.
Ice Cream Cake is ready to serve. It is suitable for any special occasions or summer season. 

TIP
Chilling bowl and beaters can help cream stays cold throughout the whipping and the process is faster.
