INTRODUCTION

Doi Maach or দই মাছ is a traditional Bengali recipe. It is made with rohu/rui fish which is cooked with yogurt (curd) and other special ingredients. It is a white-based gravy. On many occasions and functions, this recipe is served proudly. It is still a popular recipe among the Bengali community.

COOKING TIME: 30min (approx.)

INGREDIENTS:

  • sugar- 1Tbsp
  • bay leaf- 1pc
  • maida- 1Tbsp
  • yoghurt- 5Tbsp
  • green chilli- 4pcs
  • mustard oil- ½cup
  • dry red chilli- 2pcs
  • onion, sliced- 80g
  • salt- 2tsp (or to taste)
  • rehu fish (rui maach)- 6pcs
  • ginger & garlic paste- 1Tbsp
  • garam masala powder- 1tsp
  • onion- 150g & green chilli- 5pcs paste
  • cashew nuts- 10g & melon seeds- 10g paste
whole garam masala:
  • clove- 4pcs
  • cinnamon- 1pc
  • green cardamom- 4pcs

TIP:
Q: How to stop yogurt curdling in curry or gravy?

Ans: Add and mix a small amount of maida with yoghurt, then add to the gravy or curry. It will prevent yoghurt from curdling or splitting in gravy or curry.
