GINGER MILK TEA
 
INDRODUCTION

Winter, summer, or monsoon, morning tea makes us fresh and it is lifeline for many people. Without a cup of tea, many people can’t even think to start a day. Similarly, in the evening, one cup of tea, relives all our stress so thought why not to share how I make my own tea. I am aware of that all of you can make a good cup of tea. During the recipe, I have shared few tips that might be helpful for you to make tea in the future.
 
I have celebrated many significant moments by sipping a cup of tea. I believe, you might have many memories associated with a cup of tea, such as, celebrated success in exams, received award, met a good friend, came back home after a long time, met your better half, first date, first job, your child’s first day of school, you might helped someone needy people, travelled to your dream destination, bought a house or car and so on...
 
In India, we do not need any reasons to sip a cup of tea or chai. Rather we make various reasons to drink more tea in a day. In my house, in the morning and evening we must have tea. Due to geographical diversity and weather, Indian produces one of the best tea in the world and the second largest tea producer country in the world. Darjeeling’s and Nigiri’s tea leaves are one of the popular tea leaves in Indian and abroad. Many varieties of tea are consumed in different parts of India, such as milk tea (doodh chai), masala tea (ginger, cardamom, cloves, cinnamon, and peppercorns), flavoured tea, purple tea and even chai (tea) is used for general wellness due to the abundantly present antioxidants and other health benefits.
 
SERVING: 2 serving 
 
COOKING TIME: 15min (approx.)
 
INGREDIENTS
  • tea leaves- 40%
  • CTC granules- 60%
         = total 1½Tbsp  
  • crushed ginger- 4g
  • or crushed green cardamom 2pc (good quality)    
  • full cream milk- 1¼cup  
  • plain water 1¼cup

DIRECTIONS
At first, to make a nice cup of the tea, we need good quality of tea leaves. Good tea is not possible without quality tea leaves. Mystery of good tea is hidden in good quality of tea leaves. Take ginger to make the tea and crush the ginger at your convenient way. I have not removed ginger skin as ginger skin gives strong flavour of ginger so just clean the ginger with water and then crush it. Ginger has medicinal benefits so instead of just drinking milk tea you can consider to add ginger in your tea. It will give you medicinal benefits and will enhance the taste of the tea. Those who doesn’t like ginger flavours can use cardamom or other spices separately or can add together with ginger. Keep aside.  
 
To make the tea, we need: tea leaves & CTC granules 1½Tbsp  (ideal ratio of leaves 40% & granules 60%). Mix it together. Keep aside.
 
Switch on gas flame and place a saucepan. To make two cups of tea, add 1¼cup of water as some water will be vaporised after boiling and some water will be absorbed by tea leaves therefore additional ¼cup of water need to take. Once water starts boiling, add crushed/grated ginger. Boil the water for 3-4min so that ginger flavour dissolved in the water. Low down the gas flame/heat, add tea leaves and CTC granules mixture. Boil it for 2min and if you don’t like to drink milk tea then add sugar, strain and drink as a black tea.
 
Today, we are going to make milk tea. If you like milk tea then please use FULL CREAM milk, it taste good, add full cream milk 1¼cup. Increase the gas flame to the highest-level, add sugar, 3tsp for 2cups of tea or free to add amount of sugar according to your taste. Add grinned cardamom, if you like cardamom in the tea then add together with ginger.  I have not added cardamom here because I don’t like ginger and cardamom flavour together. Stir the ingredients. Wait until the tea start boiling for 2-3min.
 
At this point, you can slow down the gas flame, but I have not slow down the gas flame. Instead of that, with help of a big spoon, stir the tea up-down. Mystery of a nice tea is hidden in this process. Friends! That’s the way I make tea every day.
 
To start a good day, a nice cup of tea is very helpful. Boil the tea until you get a perfect colour, around 5-7min you will get a nice colour of the tea. Switch off the gas flame. Tea is ready to serve. Serve in a beautiful tea-set. If tea is served in a beautiful tea-set, it enhances the joy of drinking tea. I prefer to have marie biscuit with a cup of tea, but you can enjoy a cup of tea with choice of your biscuit.
 
TIP
When we move tea up-down it form foam, which helps to increase the taste of tea.
