Jhinger MalaiKari | ঝিঙের মালাইকারি is a brand new Ridge Gourd (Jinghe/Jingha) recipe on YouTube. Soft Jinghe is cooked with special spices & coconut milk. It is a niramish (pure veg) recipe.

INGREDIENTS:

  • 2tsp sugar
  • 1tbsp ghee
  • 3tbsp white oil 
  • 1pc green chilli 
  • 1pc dry red chilli
  • ⅔cup coconut milk
  • 2tsp salt (or to taste)
  • 1pc green chilli paste
  • 10g cashew nuts paste
  • 500g ridge gourd (jhinga/jhinge)
  • ⅓cup grated fresh coconut paste 
  • 1tsp black cumin seeds (kalo jeera)
  • 10g ginger & 2pcs green chilli (crushed)

Q: How to prevent being too soft of Jingha/Jinghe (ridge gourd) while cooking the recipe? 
Ans: Peeling a thin and slightly uneven layer of skin will reduce too softness of the ridge gourd (jhinga/jhinge).
