Mutton Do Pyaza or মটন দো পেঁয়াজা is a restaurant-style mutton recipe. In this recipe, onions are used in three forms, such as diced, paste, and sliced onions in different stages of cooking.

INGREDIENTS:
For marination:
- 750g mutton
- 2tbsp yoghurt
- 190g onion paste
- ¼ cup mustard oil
- 190g onion paste
- 2tsp cumin powder
- 2tsp salt (or to taste)
- 2tsp red chilli powder
- 1tsp turmeric powder
- 2tsp coriander powder
- 2tbsp ginger & garlic paste
- 5 cloves
- 1tsp ghee
- 1tbsp sugar
- 2 bay leaves
- 2 dry red chilli
- 1cup hot water
- 215g sliced onion
- 1tsp cumin seeds
- 2tbsp onion paste
- 175g diced onions
- 5 green cardamom
- 1tsp salt (or to taste)
- ¼ & ½ cup mustard oil
- 1tsp garam masala powder
- 1tsp kashmiri red chilli powder
- 1 cinnamon stick (~1”-1.5” long)
Ans: Peel the onion and soak it in water for 10-15min, which helps to reduce tearing of the eyes.
