Friends! Today, I am sharing a delicious protein-rich vegetarian recipe: Soya Nuggets Korma. In absence of green vegetables, fish, chicken or mutton, sometimes we feel helpless what to make, especially when guest come at your home without any prior notice. Most of the times, interestingly, soya nuggets are left in our kitchen's jar, but after looking on it we start remembering the bad smell of soya nuggets or feel bored to eat from the past experiences and we turn our head from it. Trust me, if you make the recipe at home you will realised that you haven't eat the recipe in any restaurant so far and your guest will puzzled what they have eat, is it a veg or non-veg recipe?

INGREDIENTS:

- ghee- 30g
- raisins- 15g
- salt to taste

- yogurt- 3Tbsp
- white oil- 185ml
- cashew nuts- 25g
- jayatri (mace)- 1pc
- cloves- 10g & 4pcs
- jaiphal (nutmeg)- 5g
- cumin powder- 1tsp
- sugar- 2tsp (optional)
- turmeric powder- 1tsp
- red chili powder- 2tsp
- coriander powder- 2tsp
- green cardamom- 4pcs
- cinnamon stick- 1” long
- black pepper seeds- 6pcs
- ginger & garlic paste- 2Tbsp
- garam masala powder- ½tsp
- special korma masala- ½tsp
- kewra essence- 1tsp (optional)
DIRECTIONS:
At first, slice the onions (270g). Keep it aside. We need to make a special korma masala (cloves- 10g, jayatri or mace- 1pc & jaiphal or nutmeg-5g). Make the powder of the ingredients in a grinder. If possible, make it in a small quantity as we need only ½tsp masala.

Switch on gas flame and put a pot, add 75ml water, ½tsp salt and wait to boil the water. Once the water starts boiling, add soya nuggets (80g) and boil for 5 minutes. Keep aside and leave the soya nuggets in the hot water for 15min.
Next, switch on gas flame, place a frying pan and put white oil (125g). Once the oil is hot, added the sliced onions, salt ½tsp and fry until golden brown or 12min on medium heat. Keep it aside on a separate plate.
In a grinder, add soaked cashew nuts (25g), 2/3 portion of the onion barista or fried onions and yogurt (3Tbsp), grind together and make the paste. Keep it aside. Keep 1/3 portion of the onion barista to use later.
After 15 minutes, take out the soya nuggets from the hot water and separate with a strive. Wash the soya nuggets with tap water thoroughly. Take one cup of soya nuggets, make keema or minced with a knife or a food chopper. Keep it aside.
Roughly crush the whole garam masala (cloves- 4pcs, green cardamom- 4pcs, cinnamon stick- 1”long and black pepper seeds- 6pcs)* and keep it aside.
Switch on gas flame and place the frying pan, add white oil (60ml) in the remaining oil used for frying onions earlier and ghee (20g). Wait to hot the oil and ghee. Tamper with crushed garam masala*, add ginger and garlic paste (2Tbsp) and fry for 2-3min. Add turmeric powder (1tsp), red chili powder (2tsp), cumin powder (1tsp) and coriander powder (2tsp) and mix nicely.
Add minced soya or soya keema (1cup) and cook for 6-7min. Add boiled soya nuggets and cook for 5-6min. Add salt to taste and the paste, which was made earlier and mix properly. Add water (1½cup) and cook for 8-10min. Add sugar (2tsp), which is optional. However, slightly sweet korma tastes good. Add soaked raisins and mix again, add water (1cup) for gravy; cover with a lid and cook for 7-8min. Sprinkle garam masala powder (½tsp) and the special korma powder (½tsp), which was made earlier. Add ghee (10g) and kewra essence (1tsp), which is optional, but if you want authentic korma recipe, then better to use it. Spread the remaining onion barista or fried onions, cover with a lid and cook for 2-3min.
Soya Nuggets Korma is ready to serve. It can be served with roti, paratha, naan, fried rice or even steam rice.

Soya chunks is known for high protein contents. It exceeds than eggs, meat and milk.
