INGREDIENTS:
- salt- 1tsp
- butter- 30g
- pasta- 250g
- milk- 500ml
- olive oil- 40ml
- thyme~ 2pinches
- cheddar cheese- 70g
- chill flakes~ 4pinches
- fresh basil leaves- 6pcs
- mixed herbs~ 2pinches
- chicken (minced)- 250g
- plain flour (maida)- 60g
- garlic (fine chopped)- 40g
- oregano leaves~ 2pinches
- white pepper powder- 1tsp
- onion (fine chopped)- 100g
DIRECTIONS:
Switch on stove and place a frying pan. Pour olive oil (5ml), add butter (10g) and wait until the butter to melt. Add plain flour (maida), 60g and cook for 1-2min. Switch off the stove and add milk (500ml) in small portions and mix the milk with the roasted plain flour. Make sure no lumps remain so mixing is very crucial at this point of cooking. Once the mixing process is over, switch on the stove. Add white pepper powder (½tsp) and mixed herbs (~2pinches), mix these ingredients with the milk and plain flour mixture. Once the mixture is starting to dense, add cheddar cheese (35g) and mix further with the mixture properly. Make sure the mixture is not too thick as after cool down the sauce will be automatically slightly thick. Homemade white sauce is ready, keep it aside.
Switch on stove, place a pot and fill with water, add salt (½tsp) and boil the water. Once the medium size water bubbles are visible, add the pasta (250g), pour olive oil (5ml), stir and mix the olive oil mix with the pasta. Cook the pasta up to 90%. Once it done, switch off the stove.
Switch on stove, place a frying pan, pour olive oil (30ml), add butter (10g) and wait until the butter to melt. Add chopped onion (100g) and fry for 2-3min. Add chopped garlic (40g) and fry for 2-3min. Add minced chicken (250g), salt (½tsp), white pepper powder (½tsp), chilli flakes (~2pinches) and cook for 7-8min or until the chicken is fully cooked. Alternately, you can use minced mutton or only vegetables. Add fresh basil leaves (6pcs) and cook for 1-2min. Add boiled pasta and gently mix with rest of the ingredients. Add white sauce, which was made earlier, gently mix the white sauce with the pasta and rest of the ingredients. Add water (½cup) if required, and gently mix further. At the end, add oregano leaves (~2pinches), thyme (~2pinches), chilli flakes (~2pinches), cheddar cheese (35g) and butter (10g). In absence of oregano leaves and thyme, you can use mixed herbs. Switch off the stove, White Sauce Pasta is ready to serve. Serve it slight hot will taste good.
TIP:
Don’t throw the extra seasoning when you order online food such as pizza or pasta. You can use the leftover seasoning while makes similar food at home.
